Not one to do things in a small way, I decided that garlicky chicken, buttery rice, creamy, tomatoey lentils must be prepared as I am trotting over to the girl's tomorrow night for dinner 'fore she heads down south. And yes, I cook and cart the food over so we both enjoy our time together. I like cooking and we both like eating. :>>

I digress.

At first, I was gonna make grilled chicken salad but then I was overcome with inspiration and decided to take my time, prepare some food, sip some wine and chill to Duffy's Rockferry.

Was a great way to unwind from my day.

Hubby called to tell me about some discoveries he has made out there. He is here one week and there the other.

He went for a run after work and ran by the river. Thought it was ace. Seems to like it but it is a mind set dontcha think?

Hubby sezs he could live anywhere. Doesn't matter where.

I beg to differ.

I could live anywhere as long as he was there.

That comment about only being happy to live where the hubby is, that is so typically a female comment, but it is good that you feel like that. I think that "comings and goings" e.g he is home one week and away another help to keep relationships alive (you get to miss each other for a short spell) reminds you that he matters.

  Hubby flies back and forth every second week.
  
  I simplified the lentil dish as the girl doesn't like onions or mushrooms but I added bay leaves (during the cooking), oregano, garlic, tomatoes, salt, pepper, olive oil, diced carrots & celery and a couple of splashes of balsamic vinegar which truly picks the dish up. Then toss in some feta cheese on the top before serving. Delish!

What do you do to the rice? Do you just melt butter on the top of plain boiled rice or do you mean something more complicated?
